Ultra Quick Dinner
A healthy dinner in 15 minutes! Yes, it's possible. I made these Crispy White Beans (10 minutes), sliced a couple of farmers' market tomatoes and snipped fresh herbs over them, and served with leftover pesto pasta (even if I'd made the pasta, it still would've been a quick dinner). And the family gobbled it up!

I have a question- it's not related to this post but I'm not sure where else to ask. I have your Vegetarian Mother's cook book and want to make the enchilada sauce but am not sure what tomato puree is. I've never seen it in stores. Can I blend up a can of diced tomatoes or used crushed tomatoes? Thanks!
Tomato puree is usually found with diced and crushed tomatoes, etc. If you can't find it, use crushed -- or yes, you can puree diced. Either will work fine.
